Vegan Dhal (Daal)

- 1/2 cup dried green lentils
- 1/2 cup dried yellow lentils
- 1/2 cup dried yellow split peas
- 1 shallot
- 2 cloves garlic
- 2 green chillis
- 3 tomatoes (well diced)
- 2 cups vegetable stock
- 1 tblsp ground coriander seeds
- 1 tblsp ground cumin
- 2 teasp tumeric
- 1 can coconut cream
Soak lentils + peas in a bowl of water for 6-8 hours. Remember to add extra water, they will expand.
Drain lentils, rinse well, and remove any funny looking bits.
Fry chopped shallot, ginger, crushed garlic. Add coriander, cumin, tumeric and finely chopped chilli.
Add peas, lentils, well diced tomatoes. Stir and add vegetable stock.
Simmer with cover for an hour or until lentils are soft. Remember to stir occasionally and add water if required.
Add coconut milk at the end, stir through.
