Filling Ingredients:

  • 32oz cream cheese
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs

Crust ingredients:

  • 1 1/2 cups crushed graham cracker
  • 1/2 cup melted butter
  • 3 tbsp sugar


  1. Combine crushed graham cracker sugar, and melted butter
  2. Form mix into crust on a 9in springform pan
  3. Place cream cheese in the bowl of an electric stand mixer
  4. Run the mixer with the wire hook attachment at medium speed, incrementally adding the sugar
  5. Add vanilla and eggs at low speed, scraping the sides of the mixing bowl between each egg
  6. Pour filling into the crust
  7. Bake a 325F for 55 minutes or until the center is almost set (if the center jiggles very slightly when the pan is shaken, its done)
  8. Allow to cool for 15-20 mins and then move to a refrigerator for at least 3 hours
